Spicy BBQ Chicken Pizza
Gluten-Free, Dairy-Free, Serves 6
Ingredients:
For the pizza dough:
- 2 cups gluten-free all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup warm water
- 2 tablespoons olive oil
For the toppings:
- 1 cup cooked and shredded chicken breast
- 1/2 cup dairy-free BBQ sauce
- 1/4 cup sliced red onion
- 1/4 cup sliced bell peppers
- 1/4 cup sliced jalapenos
- 1/4 cup fresh cilantro leaves
- Dairy-free cheese shreds
- Olive oil, for brushing
Directions:
Preheat your oven to 425°F (220°C). Place a pizza stone or baking sheet in the oven to preheat as well. Whisk together the gluten-free all-purpose flour, baking powder, and salt in a large mixing bowl. Gradually add the warm water and olive oil, stirring until a dough forms. Turn the dough out onto a lightly floured surface and knead for a few minutes until smooth. Divide the dough into two equal portions and roll each portion into a ball. Place a sheet of parchment paper on your work surface and sprinkle it with gluten-free flour. Roll out one dough ball into a circle about 1/4 inch thick using a rolling pin. Repeat with the second dough ball. Carefully transfer the rolled-out dough onto the preheated pizza stone or baking sheet. Spread half of the dairy-free BBQ sauce evenly over each pizza crust, leaving a small border around the edges. Top each pizza with half the shredded chicken, sliced red onion, bell peppers, jalapenos, and fresh cilantro leaves. If desired, sprinkle dairy-free cheese shreds over the toppings. Lightly brush the edges of the pizza crust with olive oil. Bake in the preheated oven for 12-15 minutes or until the crust is golden brown and crispy.
