Wild Berry Wellness Elixir
Gluten-Free, Vegan, Serves 2
Ingredients:
- 1 cup fresh blackberries
- 8-10 fresh mint leaves
- 1 tablespoon maple syrup
- 1 teaspoon grated fresh ginger
- 1 cup coconut water
- 1 cup ice cubes
- Fresh mint sprigs and blackberries for garnish
Directions:
Wash the blackberries and mint leaves thoroughly. Grate fresh ginger to get 1 teaspoon. In a bowl or a glass, muddle the fresh blackberries and mint leaves together to release their flavors. Add maple syrup and mint to the muddled berries. Stir in the grated fresh ginger. Transfer the muddled mixture to a blender. Add coconut water to the blender. Blend the mixture until smooth. If you prefer a smoother cocktail, you can strain the mixture using a fine mesh sieve or cheesecloth to remove pulp. Fill two glasses with ice cubes. Pour the blended blackberry-mint mixture over the ice. Garnish each glass with a sprig of fresh mint and a few whole blackberries.
-free sour cream or salsa if desired. Mix all the ingredients together before eating, squeeze fresh lime juice, and enjoy this flavorful and healthy chicken burrito bowl.
