Pumpkin Seed Candies

Ingredients
- 1 Cup Dates Pitted
- 1 Cup Pumpkin Seeds
- 1 Tablespoon Sunflower Seeds
- 1 Tablespoon Maple Syrup
- 1 teaspoon Sea Salt
- 4 ⅓ oz Dark Chocolate
Instructions
- In a food processor combine all ingredients except salt and chocolate. Mixture should be more of a thick paste. In a baking dish lined with wax or parchment paper evenly distribute seed mixture. I use my fingers to press the mixture into the dish. Once seed mixture is set into dish set aside for a few minutes. In a double boiler (glass bowl over pot half-way filled with boiling water) melt chocolate. Pour now melted chocolate over seed mixture. Let sit for five minutes and sprinkle sea salt over the top. Place candies into freezer and let setup for 1-2 hours (until chocolate has set fully). Once set, remove from dish and cut into squares. Enjoy!
